Ingredients:
- ½ cup butternut squash, cubed
- 2 cups arugula
- ¼ green apple, thinly sliced
- ¼ cup pomegranate seeds
- ¼ cup red onion, sliced
- ¼ cup feta cheese
- 3 tablespoons olive oil
- 1 tablespoon white balsamic vinegar
Instructions:
- Preheat oven to 425 degrees Fahrenheit.
- Toss squash with 1 tablespoon olive oil and roast for 25 minutes.
- In a large bowl, combine arugula, squash, apple, onion, pomegranate seeds and feta.
- Top salad with remaining oil and vinegar and toss.
